Harissa comes from the Arabic word Ihares, which means ‘to crush’ (just as pesto in Italian comes from pestare, also meaning ‘to crush’).  Tebourba Harissa is characterized by its grainy consistency and its slightly smoked flavour. Tebourba Harissa is medium  strength, to enhance  the range of tastes of the pepper.
